SAMBAR| MULLANGI SAMBAR| RADISH SAMBAR


Sambar is one of the favourite recipe in South India . Mainly in tamil nadu , day to day they will do this sambar. In sambar itself, there are many kinds. As we change the vegetable, the taste will also get differ. But all go nice with rice, idly, dosa, vada, sometimes with poori and chapati too. You can view all my Sambar recipe here.

SAMBAR VEGETABLES:

  • Radish
  • Lady's Finger
  • Brinjal
  • Drumsticks
  • Carrot,beans, potato
  • Chow chow
  • Bottle gourd
  • White Pumpkin
  • Broad beans
  • Ridge gourd and so on.... 
There are also some combination vegetables which will go nice and yummy. This is a protein rich, so daily you can give this to your kids. 

  Ingredients:


  • Toor dhal               - 3/4 cup
  • Moong dhal           -1/4  cup
  • Radish                     - 4
  • Small onion           -6
  • Tomato                   - 1(big)
  • Garlic                      -2 cloves
  • Green chilly           - 2
  • Sambar powder    - 1 To 11/2 tbsp
  • Jeera                        -1/2 tbsp
  • Mustard seeds       -1/4 tbsp
  • Urad dhal               -1/4 tbsp
  • Turmeric powder -1/4 tbsp
  • Asafoetida              -1 pinch
  • Fenugreek seed   - 1/4 tbsp
  • Tamarind              - small lemon size
  • Few curry leaves and coriander leaves
  • Oil as required.
METHOD 1: ( in vessel )
  • Pressure cook toor dhal,moong dal,turmeric powder,tomato( don't slice it),1/4tbsp jeera.(3-4 whistle)
  • Heat the pan, add oil  and fry radish until  golden brown.Take it aside.
  • Again add oil,mustard seeds,urad dhal, Fenugreek seed,jeera, asafoetida,sliced small onion,garlic and curry leaves and add fried radish,sambar powder,salt and make to cook for 10min.
  • After radish get cooked, add cooked dhal and tamarind juice and cook for 5 min.
  • Finally add curry leaves and chopped coriander leaves.

Method 2 : ( in cooker)

  • Pressure cook toor dhal,moong dal,turmeric powder,tomato( don't slice it),1/4tbsp jeera.(3-4 whistle)
  • Heat the pan, add oil  and fry radish until  golden brown.Take it aside.
  • After whistle goes, open cooker and mash dal and tomato well.
  •  Now  in cooker add sambar powder, salt, fried radish, onion, green chilli, garlic, some coriander leaves, asafoetida, tamarind juice and again make for 1 whistle.
  • Don't give so many whistle, because vegetable will be overcooked.
  • Finally tempering - heat pan, add oil, mustard, urad dal, red chilli, curry leaves and put it into sambar after whistle goes.
  • Finally add  chopped coriander leaves.
Now transfer it into serving bowl and serve it with rice, dosa, idly, vada, pongal and so on...
