I always like cauliflower as fry ,like 65. But for a change today I tried it as masala fry for parupu kuzhambu . Awesome taste. Asusual I prepared it like mutton chukka ingredients, but without garam masala. I don't like it to make it more spicy.

Simple onion, tomato, garlic mixed  masala coated cauliflower gives a good flavour to my tongue.i enjoyed this with parupu kuzhambu.

First clean cauliflower , cut cauliflower into small pieces. I used to put stem under that flower alone( not the whole stem).now add salt, turmeric and Luke warm water in it and rest for 15 min. By doing like this , it get cleaned. Again wash this with fresh water . Now it is ready to cook.

It is the easiest recipe which can be prepared within 20 minutes. Try it and enjoy with your family.only basic ingredients alone required for making cauliflower poriyal.

Ingredients:

  • Cauliflower              - 2
  • Onion                         - 1
  • Tomato                      - 1( large size )
  • Crushed Garlic        - 2
  • Home made masala  - 1 tbsp ( adjust to your taste) 
  • Fennel seeds            - 1/2 tsp
  • Turmeric powder     - 2 tsp
  • Oil                                 - as required.
  •  Few Fresh coriander leaves
  • Salt and water as required

Method:

  • Cut the cauliflower into small pieces. I like to put stem to increase quantity.but not under stem.soak this in luke warm water along with turmeric powder, salt. Rest it for 15 minutes.
  • Finely chop onion and tomato. Get ready.

  • Heat heavy bottom pan, add 4tbsp oil, after it get heat add fennel seed.
  • Now add finely chopped onion, crushed garlic and saute it until onion gets Glassy. Now add finely chopped tomato, homemade masala, salt and mix well. 
  • Now add cauliflower and required water . Add water until half of the cauliflower get sink.cover with lid.
  • After water dries, add oil little by little and fry gently until it get roast texture.
  • Finally garnish with finely chopped coriander leaves.
  • Now cauliflower masala fry is ready. Enjoy this with curd, sambar, even with variety rice too.
