Mutton chukka is my favourite recipes , which can be seen in all tamilnadu hotels. The process of doing Mutton chukka is so simple. We usually make it whenever we bought Mutton. Seperate bones and bonnes flesh for making kuzhambu or gravy , and make the boneless mutton as chukka. We usually called it as chops. 

First pressure cook mutton along with turmeric, cumin, pepper for 4 whistle. If it is Young's flesh give 2 whistle. It is more enough. Now seperate mutton water to make soup or gravy.

Now Mutton chukka is prepared along with onion, tomato, ginger garlic paste and masala which will give good taste . Even if you don't have any gravy for steamed rice, use Mutton chukka which makes you to eat 1 more time from first. 

Enjoy Mutton chukka as snacks, side dish for chapati,dosa, steamed rice.I usually won't eat vegetarian and non-vegetarian at the same time.You can also enjoy with sambar, rasam, curd rice.

Ingredients:
  • Mutton                     - 1 kg
  • Shallots                    - 1 cup
  • Tomato                     - 2 ( medium size )
  • Ginger Garlic Paste - 2 tbsp
  • Home made masala  - 1.5 tbsp ( adjust to your taste) 
  • Garam / mutton masala       - 1 tbsp
  • Cumin                         - 1/4 TSP
  • Pepper                         - 1/2 TSP
  • Turmeric powder     - 2 tsp
  • Oil                                 - as required.
  •  Few Fresh coriander leaves
  • Salt and water as required

Method:

  • Clean mutton in water 2 times.add some turmeric to wash.

  • Finely chop shallots, tomato. Cut green chilli into 2 halves.
  • In a cooker , add washed mutton,turmeric,cumin , pepper corn, required water and allow for 4 whistle. If your mutton is soft and young one's allow for 2 whistle.

  • After whistle goes, get the mutton pieces and take aside. Use the mutton water for soup or gravy.


  • Take a heavy bottom pan, heat pan and add oil. After oil heats add finely chopped onion, green chilli and saute it turns glassy.
  • Now add ginger garlic paste and saute until raw smells goes.now add home made masala , garam/ mutton masala, salt and stir in low flame. Now add finely chopped tomato and sprinkle some water. Cook until tomato mashed, oil seperates.
  • Now add cooked mutton and start to fry . First allow water to get dry up.add oil now and then and roast it in a low flame.It takes some times, have patience to taste the mutton chukka.
  • Now oil comes out . This is the perfect time for turn off. Finally garnish with finely chopped coriander leaves.
