Veg Biryani is a healthy recipe which have a combo vegetables mixed with Indian spices will give more taste to our tongues. It is a not stoppable recipe. All like biryani. But veg Biryani is special. You can add vegetables to your wish, both vegetarian and non - vegetarian can have this. So in special occasion I usually prefer veg Biryani.

I today done this for my daughter's birthday. She love biryani and ask me to put more peas and kalan in it. I done this  mild as my kids like. If you wish , you can add 15 red chilli. I used only 10 red chilli. But the remaining ingredients are same. 

I used 10 red chilli and 10 green chilli for 500 gm seeraga samba rice. I used normal refined oil. If you want more richness add ghee.If you have red chilli powder , use it instead of red chilli. Use 1 tbsp red chilli powder.

Veg Biryani will go best with onion raita, potato peas gravy, brinjal biryani gravy , pickle. I usually go with onion raita which is my favour.

INGREDIENTS:

  • Seeraga samba   - 1/2 kg ( 3 cup)
  • Onion                - 2 big size ( 200 to 250gm)
  • Tomato            - 3 ( 200 gm)
  • Ginger garlic paste           - 3 tbsp
  • Green chilli    - 10
  • Curd                -150 gm
  • Cinnamon      - 2
  • Cloves              - 4
  • Bay leaves       - 2
  • Cardamom      - 3
  • Kal paasi          - 1 tsp
  • Carrot               - 2
  • Beans.              - 15
  • Potato               - 1
  • Peas                  - 1/2 cup
  • Soya chunk.    - 1/4 cup
  • Mushroom.     - 200 gm
  • Red Chilli  - 10
  • Turmeric powder    - 1/4 tbsp
  • Hand of coriander and mint leaves
  • Ghee                     - 3 tbsp( optional)
  • Oil.                        -100 ml
  • Salt as required.
  • Water.                  - 4.5 cup.
Method:
  • Grind ginger,garlic,red chilli into fine paste.
  • Finely slice, onion, tomato, 4 green chilli and cut vegetables in cube.
  • Soak soya in warm water for 10 min and squeeze it. Take aside.
  • Overnight soak dry peas and allow it for 2 whistles.
  • Heat the cooker add ghee,oil, now add the spices one by one. (Cinnamon,clove,cardamom, bay leaves, kal paasi)

  • SEERAGA SAMBA VEG BIRYANI

  • Add sliced onion and cook until it becomes golden brown, now add that paste and stir until it's raw smell goes.

  • SEERAGA SAMBA VEG BIRYANI

  • Now add turmeric, salt and tomato in it and cook until tomato get mashed.
  • Then add carrot,beans,potato( cut into medium size),peas, soya chunk,mushroom, curd and stir for 10 to 15 min . Add coriander and mint leaves along it.

  • SEERAGA SAMBA VEG BIRYANI

  • Add  water and allow it to boil.

  • SEERAGA SAMBA VEG BIRYANI

  • After water boils add seeraga samba rice and cook until water get dries. In this stage add green chilli as whole and taste a little and add salt if required.

  • SEERAGA SAMBA VEG BIRYANI

  • After water dries close cooker and allow for 15 min in medium flame.
  • After 15 min turn off and rest it for 15 min again.

  • SEERAGA SAMBA VEG BIRYANI

  • Now open it and transfer it into serving bowl and enjoy with your family.
Note: If you close the lid after adding rice and water, it won't cook. It look like half cooked in top and cooked mashy at bottom layer. So be patience until water dries and then close the lid .
