KUSKA | PLAIN BIRYANI|EMPTY BIRYANI
One day, all in my family had went to neighbours function. I had some personal work, so I didn't go.For that day lunch I like to have a simple, but spicy single recipe. I think about biryani. But I don't have any vegetables or meat in my kitchen. I had only onion, tomato, chilli,etc... As essential in daily cooking. At that time I thought to have plain biryani. I did this without using any ready made ingredients.
I here used red chilli, fresh garlic, fresh ginger. If you want you can add also ready made red chilli powder, ginger garlic paste. It is upto your wish to add garam masala or biryani masala. But I have skipped both garam masala and biryani masala , as I need mild spices flavour.
As I loved this taste very much, I like to share kuska recipe with you all. Come lets see the direction.

KUSKA | PLAIN BIRYANI|EMPTY BIRYANI
INGREDIENTS:
- Seeraga samba - 1 cup
- Onion - 1 big size
- Tomato - 2 big size
- Ginger garlic paste - 2 tbsp
- Green chilli - 2
- Curd - 50gm
- Cinnamon - 2
- Cloves - 2
- Bay leaves - 2
- Cardamom - 2
- Kal paasi - 1 tsp
- Red Chilli - 3
- Turmeric powder - 1/4 tbsp
- Hand of coriander and mint leaves
- Ghee - 2 tbsp( optional)
- Oil and Salt as required.
- Water. - 2 cup.
- Grind ginger,garlic,red chilli into fine paste.
- Finely slice, onion, tomato, green chilli.
- Soak rice and start the cooking process.
- Heat the cooker add ghee,oil, now add the spices one by one. (Cinnamon,clove,cardamom, bay leaves, kal paasi)
- Add sliced onion, green chilli and cook until it becomes golden brown, now add that paste and stir until it's raw smell goes.
- Now add turmeric, salt and tomato in it and cook until tomato get mashed.
- Wait until tomato get mashed, and add curd . Stir well and wait until oil gets seperate.
- Now add water and allow it to boil. After it boil well, add soaked rice and wait until 3/4 of water dries up.
- After water dries close the cooker lid and make the flame to medium and cook for 15min.
- Atlast turn off the flame and open after 15 min
- A spicy kuska| plain biryani is before you. Enjoy this with onion raita, a perfect combination.
