 POTATO:

ORIGIN : SOUTH AMERICA (PERU)

        Around 8000 B.C to 5000 B.C , potatoes were first cultivated by Inca Indians in Peru.After it is carried  to Europe, then to ireland and so... Now all over the world . we can see various variety in potatoes now. There are 200 varieties of potatoes sold in U.S. In U.S Major 7 varieties of potatoes: Russet, Red, White, Yellow, Blue/Purple, Fingerling , Petite.
In India kufri Sindhuri, Kufri Chipsona , Kufri Chandramukhi, Kufri Khyati and so on... 


    
     Now potatoes are the 3rd most important food crop in the world after Rice and Wheat. And In India Potatoes are the most consumed vegetables.

   Instead of going deep into the history and statistics of potatoes, lets see the best way to select the potatoes, best way to store the potatoes, best way to clean the potatoes and healthiest way to consume potatoes.

POTATO - EASY HANDLING TIPS:-

BEST WAY TO SELECT POTATOES:

1.Select Potatoes , which should be firm and having smooth skins.Don't ignore the  potatoes due to its dirty. 





2.Try to avoid potatoes with sprouts and potatoes with green.



3. Avoid potatoes with cut surface, decayed areas, soft or if it is  having dark spots in it.

BEST WAY TO STORE POTATOES:



  Proper storage can extend their shelf life and prevent unnecessary waste.

1. Don't wash the potatoes for storing as this could lead to early rot and spoilage.

2.Only perfect potatoes are suitable for long term storage, even a month.

3. Store them in a cool, dry and in dark place. Cool means do not store potatoes  in refrigerator. In freezer,raw potatoes can also turn brown and smooth.
 
4.Dry and dark as in a cupboard that's not near the sink and where they won't be forgotten.A ventilated and dry basement is also a good option.
Infact, one study found that storing potatoes in cool temperatures more than quadrupled their shelf life, compared to storing them in room temperature.Avoid direct sunlight.

5. Storing at lower temperature preserve vitamin c content by 90℅, whereas in warmer room temperature  only 20℅  of vitamin c content is preserved.

6. Still if you have confusion in storage, store in a open basket.( for airflow to prevent accumulation of moisture, which leads to spoilage). Don't store in close container, because it promote moisture and speed their demise.



7. Finally, you should remember, last longer storage of potatoes will lead to start potatoes to  sprout and it also lose some of their freshness and flavour.

BEST WAY TO CLEAN POTATOES:


    All potatoes need to be cleaned, even if you plan on peeling them later on.Cleaning potatoes not only get rid of potential chemical and pesticides, but also dirt and bacteria. 



1. First, wash your hands and the start to wash the potatoes.

2. To clean potatoes, soak the potatoes in normal water with some turmeric powder for few minutes. The dirty start to sediment down. 

3. After few minutes, clean potatoes  with your hands in circular motion. If you don't wash them, you might end up dragging some of the bacteria or dirt onto the flesh when you go to peel them.

HEALTHY WAY TO CONSUME POTATOES:

1.Healthy way of consuming is through boiling, steaming and baking.

2. Try to cook  potatoes along with its skin , as it contain fiber and nutrition(vitamins, minerals).Peeling reduce their nutritional content.

3.In some unavoidable situation, if you buy green potatoes, peel the green and start to cook. If you see any green in flesh, discard it. Because it has solanine ( toxic chemical). When we consume in very high quantities, it can cause nausea, vomitting and diarrhoea. So discard it.



4.suppose, in another situation if  your stored potatoes gets sprout, don't eat the sprouts. Just cut them out and proceed to cut.

5. While you are slicing potatoes, the cut surfaces of potato will oxidised if you left in out for long period. To prevent this you cut potatoes and put in cold water, so that discolouration does not occur. Eventhough if discolouration occur, don't feel it will be good while cooking.



6.Avoid adding ghee, unhealthy oils, butter, cream, cheese and artificial flavouring in high amount. Try to use olive oil for baking potatoes. 

7.Fried form adds more calories and fat than steamed or baked.
